Rosmarinus Officinalis 'Roman Beauty' is a slow and moderate growing shrub, groundcover plant, herb and perennial plant that can be grown in USDA Plant Hardiness Zones 8A through 11. It matures to an average height of 1 foot to 2 feet and an average width of 1 foot to 2 feet, depending on climate and other environmental factors. It prefers growing in a location that provides full sun and grows best when planted in sand, loam, clay or silt soil that is well drained. In the spring Chef's Choice® Rosemary produces blue flowers. The foliage is blue green and grey / silver in color. If you like fragrance, Rosmarinus Officinalis 'Roman Beauty' has fragrant foliage and fragrant flowers.

Chef's Choice® Rosemary can be useful in the landscape in mass plantings, in containers or planters, as a border or edger, as a groundcover, in landscape beds or islands or in small groupings and also in rock or xeriscape gardens, cottage gardens, food gardens, herb gardens or perennial gardens.

Noteworthy Characteristics

From the Southern Living Plant Collection comes Chef's Choice® Rosemary, an outstanding new rosemary specially selected for its higher oil content, spicy flavor, arching stems, and compact, mounding habit. This very dwarf, trailing variety is prized for its tidy, obedient habit, growing to 15 inches high with a 12-inch spread in two years in our gardens. Chef's Choice® fits perfectly in smaller garden spaces, small to medium sized containers, and even indoors!

Chef's Choice® Rosemary features dainty spikes of lightly-scented sky blue flowers that cover the aromatic foliage in spring. It's attractive, dense, fragrant needle-like leaves remain grayish green in color year round in the garden and are equally as flavorful as other rosemary varieties, making it an excellent variety for culinary use with its strong aroma and high oil content. Its fine texture sets it apart from other garden plants with less refined foliage.

Growing & Harvesting Information

Rosemary prefers full to mostly sun and a well-drained soil, thriving in gravely or rocky soils. It will grow in a wide pH range between 6 and 8.5 with a preferred range between 6.0 and 7.5. As with many other types of plants, constantly soggy soil is a killer. To prevent root rot and other diseases, be sure your plants enjoy good soil drainage and air circulation. If needed, add a soil conditioner or small gravel to the backfill mixture when planting. When growing in cointainers, use a container with sufficient drainage holes and fill it to 1-inch below the top rim with professional potting mix.

Cut stems at any time for fresh rosemary. To dry rosemary, use a rack or hang it upside down in bunches to dry. Once stems are dry, strip the leaves from them. You can also freeze rosemary sprigs,preserve them in vinegar, or use them to flavor oil or butter.

Uses & Cooking Information

While rosemary blends well with other herbs, use it lightly on its own in lamb, pork, chicken, and veal dishes, as well as in soups and stews, vegetables, and sauces. Rosemary provides a wonderful flavor in breads and makes a good marinade with olive oil, wine, and garlic. Rosemary’s aromatic qualities also enhance a bath, bouquet, wreath, or sachet.
